Ingredients (Large Batch 4 cups)

  • 10 stalks green onion (scallions), roughly chopped
  • 2–3 celery stalks, roughly chopped
  • 1 scotch bonnet pepper (seeded if needed for less heat), or scotch bonnet pepper powder / chili pepper of choice (optional)
  • 20 cloves fresh garlic
  • 20 sprigs fresh thyme
  • 30 whole pimento seeds (allspice)
  • 3 medium yellow onions, chopped
  • 1 cup extra virgin olive oil (or vegetable oil of choice)
  • Pinch of salt
  • Squeeze of fresh lime juice
  • Optional: small handful of fresh parsley or a small amount of culantro

Ingredients (Smaller Batch – 1 cup)

  • 10 stalks green onion (scallions), roughly chopped
  • 1–2 celery stalks, roughly chopped
  • 1 scotch bonnet pepper (seeded if needed), or pepper of choice (optional)
  • 10 cloves fresh garlic
  • 10 sprigs fresh thyme
  • 10 whole pimento seeds (allspice)
  • 1 medium yellow onion, chopped
  • ½ cup extra virgin olive oil (or vegetable oil of choice)
  • Pinch of salt
  • Squeeze of fresh lime juice
  • Optional: small amount of parsley or culantro

Instructions

  1. Prepare the Pimento Seeds
    Add the pimento (allspice) seeds to a mortar and pestle. Grind until lightly crushed and fragrant. This step helps deepens the overall flavor and prevents a chewing or choking hazard.
  2. Prep the Pepper
    If using a scotch bonnet, seed it if you prefer milder heat. For maximum heat, leave the seeds intact.
  3. Add a pinch of salt and a squeeze of fresh lime juice.
  4. Blend the Seasoning
    Add the crushed pimento seeds and all remaining ingredients to a blender or food processor. Blend until smooth or slightly chunky, depending on your preference. Scrape down the sides as needed to ensure even blending.
  5. Adjust & Store
    Taste and adjust seasoning if needed (it’s pretty potent but it flavors dishes amazingly well). Transfer to a clean glass jar or airtight container.

  • Refrigerator: Store for up to 2 weeks with a thin layer of oil on top.
