Juicy Oven Roasted Chicken Legs

Roasted chicken legs are an easy go to weeknight dinner! Golden crispy skin, meat so tender it practically melts in your mouth, and flavors that linger long after the first bite. This recipe leans into aromatic herbs and bold seasonings while keeping the meat juicy and comforting.

Ingredients

  • 6 – 8 chicken legs, skin on
  • 3 tablespoons olive oil
  • 2 tablespoons green seasoning (store-bought or homemade)
  • 1 teaspoon fresh thyme leaves, or ½ teaspoon dried thyme
  • 1 teaspoon no-salt Cajun seasoning
  • 4 cloves garlic, smashed
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon ground black pepper
  • 1 teaspoon kosher salt (or Garlic Salt)
  • ½ teaspoon cayenne pepper (optional, for a gentle heat)
  • 1 lemon, halved
  • Pan juices for basting
  • Fresh herbs for garnish (optional: thyme, parsley, or rosemary)

Instructions

  1. Preheat your oven: Set to 350°F (175°C).
  2. Prep the chicken: Pat chicken legs dry with paper towels to help the skin crisp beautifully.
  3. Season: In a small bowl, mix olive oil, green seasoning, and all dry seasonings. Rub this mixture all over the chicken legs, including under the skin for maximum flavor.
  4. Add aromatics: Place chicken legs in a covered baking dish or Dutch oven. Tuck smashed garlic cloves and the optional fresh thyme (about 3 or 4 stems) around them.
  5. Bake covered: Cover the dish with a lid and bake at 350°F for 30–35 minutes. This helps the chicken cook through gently without drying out.
  6. Finish uncovered: Reduce the oven to 325°F, remove the lid, and continue baking for about 1 hour. Periodically spoon pan juices over the chicken to ensure a golden brown finish and keep the meat succulent.
  7. Rest and serve: Let the chicken rest for 5 minutes after baking. Garnish with fresh herbs, squeeze lemon juice over top and serve with your favorite sides.

This method locks in the juiciness while giving you that irresistibly golden-brown skin.

Serve with yellow rice or mashed potatoes and roasted veggies.
